Zucchini-and-mozzarella frittata

Ingredients:

  • 4 tablespoons olive oil, divided
  • 1 large zucchini, thinly sliced
  • 1 yellow onion, chopped
  • 1 tablespoon chopped fresh oregano leaves
  • 4 cloves garlic, finely chopped
  • 8 large eggs
  • 1 teaspoon kosher salt
  • ¼ teaspoon crushed red pepper, plus more for serving
  • 110g fresh mozzarella, cubed (about ¾ cup)
  • Green salad, for serving

Instructions:

  1. Preheat the oven to 350°F. Warm up 2 tablespoons of oil in a 10-inch skillet that can be used in the oven over medium heat. Put in zucchini, onion, oregano, and garlic and cook, stirring regularly, until the veggies are slightly softened, for about 8 to 10 minutes.
  2. Beat the eggs, salt, and crushed red pepper together until mixed. Pour the remaining 2 tablespoons oil into the skillet, making sure it spreads evenly. Pour the egg mixture over the vegetables and move the skillet around a bit to help the eggs spread evenly. Cook over medium heat until the edges start to set, approximately 2 to 3 minutes. Sprinkle cheese on top.
  3. Place the skillet in the oven and bake until the top is just set, around 13 to 15 minutes. Allow it to cool down a bit.
  4. Carefully remove the frittata from the skillet and season it with more crushed red pepper. Serve with a side salad.
