Zingy grapefruit, prawn, avocado & tamarind salad

Delight your palate with a vibrant combination of zingy grapefruit, succulent prawns, creamy avocado, and tangy tamarind in this refreshing salad.

Ingredients:

  • 3 tbsp sesame oil
  • 1 tsp tamarind
  • 1 small garlic clove, crushed
  • 3cm piece of ginger, peeled and finely grated
  • 3 tsp fish sauce
  • 1-2 limes, juiced
  • 2 ripe avocados, stoned, peeled and thinly sliced
  • 2 red grapefruits, peeled, pith removed, sliced into rounds
  • 8 radishes, thinly sliced
  • 150g cooked king prawns, peeled
  • 2 tbsp sesame seeds
  • ½ small bunch of coriander, leaves picked and torn

Instructions:

  1. Mix together the sesame oil, tamarind, minced garlic, ginger, fish sauce, and lime juice. Adjust the seasoning with more fish sauce if necessary, then add salt and pepper to taste.
  2. Place the sliced avocado, grapefruit segments, sliced radishes, and cooked prawns on a serving dish. Pour the prepared dressing over the top and sprinkle with sesame seeds and chopped coriander.
