Zesty red quinoa salad

Ingredients:

  • 1 cup red quinoa
  • 1½ cups water
  • 1/2 sweet potato, diced and parboiled
  • 1/2 red pepper, diced
  • 3 kumquats finely chopped, plus a few slices for garnish
  • 1 tablespoon olive oil
  • 1 tablespoon good quality maple syrup
  • 1 tablespoon chopped cilantro, plus a little for garnish

Instructions:

  1. Allow the quinoa to soak in hot water for 5 minutes. Drain and wash it. Place it in a saucepan with 1½ cups of water and bring to a boil. Reduce the heat, cover, and simmer until the water is absorbed and the quinoa is soft, approximately 20 minutes.
  2. Move the cooked quinoa into a large mixing bowl. Include the sweet potato, red bell pepper, kumquats, olive oil, and maple syrup and stir thoroughly. Sprinkle in the cilantro and mix gently. Serve warm, at room temperature, or chilled. Decorate with chopped cilantro and sliced kumquat.
