Yellow bean, asparagus and tomato salad

Ingredients:
- 1 tablespoon vegetable oil
- 1/2 small onion, thinly sliced
- 450g Chinese long beans or green beans, cut into 3-inch lengths
- 1/2 red bell pepper, peeled with a vegetable peeler and cut into 1/3-inch dice
- 1/2 teaspoon sugar
- 1/4 cup water
- 2 tablespoons soy sauce
- 1 teaspoon cracked black pepper
Instructions:
- Warm up the oil in a spacious frying pan. Put in the onion and sauté over medium-high heat until it turns golden brown. Toss in the long beans and red pepper, stir them around until the beans start to soften and get browned in some areas, which should take about 5 minutes. Sprinkle in the sugar. Pour in the water, put on the lid, and let it simmer over low heat until the water evaporates and the beans become tender, for about 5 minutes. Mix in the soy sauce and pepper, and cook for another minute. Move the stir-fry to a serving dish and enjoy.
