Indulge in the flavors of the season with a delightful winter spinach salad featuring creamy Petit Billy goat cheese. Perfect for a cozy meal!
Ingredients:
- 2 cups fresh spinach
- 2 cups fresh arugula
- 3 small beets
- 1 medium green apple
- 1/2 cup walnuts
- 1/2 cup Petit Billy Goat Cheese crumbled
- 1/2 cup olive oil
- 3 tbsps balsamic vinegar
- 2 tbsps granulated sugar
- salt and pepper to taste
Instructions:
- Start by cleaning and drying all the vegetables and fruits. Mix spinach and arugula in a big bowl and keep it aside. Peel the beets and cut them into pieces about the size of a quarter. Fill a medium-sized pot about 3/4 full with water and heat it over medium to high heat until it starts boiling. Once boiling, put the chopped beets in and let them cook until they are soft all the way through (around 15-20 minutes). Once cooked, drain the beets and set them aside.
- While the beets are cooking, dice the apple into pieces similar in size to the beets. Also, roughly chop the walnuts.
- Prepare the dressing by mixing olive oil, balsamic vinegar, sugar, salt, and pepper in a medium bowl. Whisk everything together until well blended.
- Combine the cooked beets, diced apples, and chopped walnuts with the spinach and arugula in the large bowl. Mix everything together. Add the crumbled goat cheese on top. Finally, drizzle the prepared dressing over the salad. Your delicious beet salad is now ready to be enjoyed!
