Winter salad with toasted walnuts

Delight in the flavors of winter with this refreshing salad, featuring crisp greens topped with crunchy toasted walnuts. Perfect blend of textures and flavors.

Ingredients:

  • 1 medium shallot, finely diced
  • 1 tablespoon red-wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ cup walnut oil
  • 4 cups mixed salad greens, such as frisée, watercress, Boston, escarole and/or curly endive, torn into bite-size pieces
  • 1 Belgian endive, cut crosswise into thin slices
  • 1 small fennel bulb, trimmed and cut into 2-inch slivers
  • 110g white mushrooms, sliced
  • ¼ cup chopped walnuts, toasted

Instructions:

  1. For making vinaigrette: Mix shallot, vinegar, mustard, and salt in a small bowl. Allow it to sit for 5 minutes, then stir in oil.
  2. For preparing the salad: Mix salad greens, endive, fennel, and mushrooms together. Pour the vinaigrette over the mixture and mix well. Sprinkle with walnuts and serve at once.
