Winter salad with lemon-yogurt dressing

Ingredients:

  • cup plain whole-milk yogurt
  • /3 cup chopped fresh Italian parsley
  • /4 cup avocado oil or canola oil
  • /4 cup fresh lemon juice
  • garlic clove, pressed
  • Fine sea salt
  • cups coarsely chopped romaine lettuce (about 8 large leaves)
  • 1/2 cups 1/2-inch cubes peeled jicama
  • small carrots, thinly sliced into rounds
  • avocado, halved, pitted, peeled, sliced
  • cup sliced celery
  • cup 1/2-inch cubes peeled kohlrabi or peeled broccoli stems
  • /4 cup canned garbanzo beans (chickpeas), drained
  • /4 cup halved pitted Kalamata olives
  • /2 cup thinly sliced radishes
  • /2 cup roasted sunflower seeds

Instructions:

  1. Combine the initial 5 ingredients in a small bowl and mix well. Season the dressing with sea salt and freshly ground black pepper according to your preference.
  2. Mix the lettuce and the following 8 ingredients in a large bowl. Pour the dressing over the salad and mix gently until everything is coated. Serve the salad on plates and garnish with sunflower seeds.
