Winter kale salad

Ingredients:
- 2 bunches black kale
- 1 cup kumquats
- 1/4 cup pistachios
- 1 cup ricotta salata
- 1/2 cup pomegranate molasses
- 1/4 cup lemon juice
- 1/4 cup honey
- 1/4 cup olive oil
- 1/4 cup water
- 1/2 tablespoon black pepper
- kosher salt, to taste
Instructions:
- Rinse and slice the kale thinly. Roast the pistachios in an oven preheated to 160 °C for 20 minutes until they turn golden brown.
- Quarter the kumquats.
- Break the ricotta salata into small pieces.
- For the dressing: Combine the pomegranate molasses, honey, fresh lemon juice, olive oil, water, black pepper, and salt according to your taste preference.
- For the salad: Mix all elements in a mixing bowl, excluding the ricotta cheese.
