Winter kale salad

Ingredients:

  • 2 bunches black kale
  • 1 cup kumquats
  • 1/4 cup pistachios
  • 1 cup ricotta salata
  • 1/2 cup pomegranate molasses
  • 1/4 cup lemon juice
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/2 tablespoon black pepper
  • kosher salt, to taste

Instructions:

  1. Rinse and slice the kale thinly. Roast the pistachios in an oven preheated to 160 °C for 20 minutes until they turn golden brown.
  2. Quarter the kumquats.
  3. Break the ricotta salata into small pieces.
  4. For the dressing: Combine the pomegranate molasses, honey, fresh lemon juice, olive oil, water, black pepper, and salt according to your taste preference.
  5. For the salad: Mix all elements in a mixing bowl, excluding the ricotta cheese.
  6. After thorough mixing, transfer to a serving bowl and sprinkle the ricotta on top.
