Winter fruit salad

Ingredients:

  • 1 large pink grapefruit
  • 1 clementine or navel orange
  • 1 blood orange
  • 1 Honeycrisp apple (or other sweet crisp apple)
  • 1 scallion, finely chopped
  • 2 tablespoons chopped toasted walnuts (optional)
  • 2 tablespoons crumbled feta or goat cheese (optional)
  • kosher or flaky sea salt
  • 3 tablespoons fruity olive oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon maple syrup
  • salt and fresh ground black pepper to taste

Instructions:

  1. Remove the skin of the grapefruit, Clementine, and blood orange, ensuring to take off the white membrane as much as possible. Slice them into round pieces. Get rid of any seeds and then cut the rounds into halves. Place the fruit in layers on a plate and lightly sprinkle some salt on top. Take the peel and core out of the apple, then slice it into moon-shaped pieces. Display the fruits on a large plate, and scatter chopped green onions, walnuts, and cheese (if preferred) over the top.
  2. Combine oil, vinegar, and maple syrup in a bowl and mix well until it forms a uniform mixture. Taste it and make any necessary adjustments. Season with salt and pepper according to your preference. Sprinkle this dressing over the salad.
