Winter cobb chopped salad

Ingredients:

  • 1 head romaine, rinsed & drained well
  • 340g smoked turkey breast (about 2 slices 1/2-inch thick from the deli)
  • 230g bleu cheese
  • 3 hard boiled eggs, peeled
  • 2 medium to large golden beets, roasted and peeled
  • 2 Granny Smith apples, cored
  • 1 large Hass avocado
  • 90g pancetta cooked until crisp
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Instructions:

  1. Cut romaine lettuce into thin strips: cut large leaves into quarters and small leaves in half lengthwise, then slice them into pieces that are about half an inch wide. Dice the turkey, cheese, eggs, beets, apples, and avocado into pieces that are roughly half an inch in size. Combine all the diced ingredients in a large bowl along with the pancetta (if it was originally sliced, make sure to roughly chop or crumble it before adding it to the bowl.) Pour in the lemon juice and olive oil, and season with salt and pepper. Stir well to ensure all ingredients are coated. Taste the salad and add more salt and pepper if necessary.   2. Please note: chicken breast or plain turkey breast can be used as substitutes, and smoked bacon can be used instead of pancetta.
