Ingredients:
- 450g boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1 head butter lettuce, washed and dried
- 1 large handful arugula or watercress, washed and dried
- 1 small or 1/2 large bulb fennel, very thinly sliced
- 3 seedless mandarins, peeled, cut into wheels, and pulled into pieces
- 1 small avocado, diced
- 1 tablespoon white miso paste
- 1 tablespoon plus 2 teaspoons apple cider vinegar
- 1 teaspoon honey
- 2 scallions, white and light green parts only, finely chopped
- 1/2 teaspoon ground cumin
- 1/4 cup plus 2 teaspoons extra-virgin olive oil
Instructions:
- Tenderize the chicken: Place the chicken breasts on a flat surface. Use a meat tenderizer or the flat side of a kitchen utensil to gently flatten the thicker part of the breasts, ensuring they have a uniform thickness. Season both sides with salt and pepper.
- Cook the chicken: Warm up 2 teaspoons of olive oil over medium heat in a spacious cast-iron or non-stick pan. Sear the chicken until it achieves a golden brown color on one side and is partially cooked, approximately 8 minutes.
- Turn the chicken over and continue cooking until it is fully cooked and no longer pink in the middle, for an additional 8 minutes. Then, transfer the chicken to a cutting board and allow it to rest for a minimum of 5 minutes. Slice it thinly across the fibers.
- Prepare the miso dressing: Combine miso, apple cider vinegar, honey, green onions, and cumin in a small bowl, whisking until the mixture is smooth. Slowly pour in the remaining olive oil while continuously whisking.
- Put together the salad: Mix the lettuce, arugula, and fennel in a large bowl with just enough dressing to lightly cover the greens. Divide the salad among 4 bowls. Add slices of avocado, mandarin orange segments, and the sliced chicken to each bowl, drizzling some extra dressing on top. Serve promptly.
