Wilted spinach salad with warm feta dressing

Ingredients:

  • 9-ounce bag fresh spinach leaves
  • tablespoons olive oil, divided
  • medium red onion, halved, cut into 1/3-inch-thick wedges with some core attached
  • 7-ounce package feta cheese, coarsely crumbled
  • tablespoons Sherry wine vinegar

Instructions:

  1. Start by putting the spinach in a big bowl. Use 2 tablespoons of oil in a large, heavy skillet on high heat. Cook the onion until it becomes brown and tender, for approximately 7 minutes. Then, transfer the cooked onion to the bowl with the spinach and remove the skillet from the heat. Next, add the remaining 3 tablespoons of oil and cheese to the skillet. Stir until the cheese starts melting slightly, which should take about 1 minute. After that, mix in the vinegar. Season with salt and pepper according to your taste. Pour this mixture over the spinach and gently mix it until the spinach is coated and slightly wilted.
