Wilted spinach salad w/balsamic caramelized red onions

Indulge in the flavorful combination of wilted spinach, tender balsamic caramelized red onions, and a tantalizing dressing. Perfect for a gourmet salad experience.

Ingredients:

  • 1 small package organic baby spinach
  • 1 large red onion – sliced thin
  • 2 tablespoons e.v. olive oil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • extra olive oil for drizzling
  • juice of ½ small lemon (a little over a tablespoon)

Instructions:

  1. Clean and pat dry the spinach. Transfer to a big bowl.
  2. Cook onions with a pinch of salt in olive oil until they become translucent and start to caramelize. Pour in balsamic vinegar and keep cooking until they are completely caramelized with a light golden color.
  3. While the onions are hot, pour them along with the oil over the spinach, sprinkle with an additional pinch of salt and pepper. Squeeze some fresh lemon juice on top. If necessary, add more olive oil. Mix everything together well and serve while it's still warm...
