Wilted kale and walnut salad

Indulge in the perfect blend of wilted kale and crunchy walnuts in this delectable salad. A harmonious mix of textures and flavors awaits your taste buds.

Ingredients:

  • 1 bunch Organic Kale chopped coarsely
  • 1 tablespoon Bacon Grease or Lard (Preferably from pastured pigs)
  • 2 cloves garlic cut in half and then sliced thinly
  • 1 teaspoon Sea Salt
  • 1/2 cup Walnuts
  • 1 tablespoon lemon juice

Instructions:

  1. Toast the walnuts in a small saucepan over low heat for 5-8 minutes until they release a fragrant aroma. Then, finely chop them into small pieces and set aside.
  2. In a larger pan, such as a cast iron skillet, warm up the oil over medium-high heat. Add the kale and stir well to coat it lightly with the bacon grease. Cook until the kale is wilted but still slightly crisp, which should take less than 5 minutes. Once it is almost cooked, add the garlic and continue stirring until the garlic becomes fragrant, which usually takes about 1 minute. Remove the pan from the heat, then season the dish with salt, lemon juice, and the chopped walnuts. Now, you can sit back, relax, and savor the dish!
