Wilted greens salad with squash, apples, and country ham

- tablespoons vegetable oil
- ounces thinly sliced country ham or prosciutto, torn into pieces
- apple, such as Braeburn or Fuji, quartered, cored, thinly sliced
- tablespoons minced shallot
- tablespoons (or more) fresh lemon juice
- tablespoons buttermilk

Instructions:
- Delicately massage greens with 2 tablespoons of salt in a large bowl. Allow them to sit for about 15 minutes until they start releasing water and become softer, remember to check frequently. Wash the greens in two rounds of cold water. Press the greens to remove excess water and gently dab them with a kitchen towel; then move them to a fresh bowl.
- While waiting, heat the oven to 425°F. Cover a baking sheet with foil. Mix the squash with 1 tablespoon of olive oil on the prepared sheet; add some salt for seasoning. Roast the squash until it becomes slightly brown and tender, turning it occasionally, for about 20 to 25 minutes. Allow it to cool down.
- In a medium skillet over medium-high heat, warm vegetable oil. Cook the ham in batches until it becomes crispy, for around 1 to 2 minutes on each side. Place them on paper towels to absorb excess oil.
- Combine the cooked squash, apple, shallot, lemon juice, and the remaining 2 tablespoons of olive oil with the greens. Mix well; season with salt according to your taste. Distribute the mixture evenly on plates. Drizzle some buttermilk on top. Arrange the crispy ham over the greens and season with freshly ground pepper.
