Wilted green salad

Ingredients:

  • 2 tablespoons olive oil
  • 1 red onion, thinly sliced
  • 1 clove garlic, finely chopped
  • 2 tablespoons balsamic or red wine vinegar
  • 1 tablespoon raisins
  • 450g fresh kale, Swiss chard, spinach or beet greens, washed and rinsed and stems removed
  • 1 orange, peeled and coarsely chopped
  • 3 slices cooked bacon, crumbled (optional

Instructions:

  1. Heat oil in a big skillet over medium high heat. Add onions and sauté for 1 minute. Throw in the garlic and cook for another 30 seconds. Mix in the vinegar and raisins and cook for 2 minutes. Take the skillet off the heat and mix in the greens until coated. Quickly transfer the greens to a big bowl and mix in the orange and bacon. Add salt and pepper to taste, and serve right away.
