Wild rice salad with marcona almonds

Ingredients:

  • 1 cup wild rice
  • 8 cups cold water
  • Sea salt
  • 2 tablespoons finely chopped chives
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon sherry vinegar
  • 2 tablespoons olive oil
  • 1/2 cup Marcona almonds

Instructions:

  1. Place the rice in a big saucepan, pour in the water, mix in 1 teaspoon of salt and bring it to a boil. Put a lid on and let it cook over low heat until the wild rice is soft but slightly firm, approximately 1 hour. Make sure to drain the wild rice properly.
  2. Mix the wild rice with chives, parsley, sherry vinegar, olive oil, and almonds. Add salt as needed and present.
