Wild rice salad

Ingredients:

  • 1 cup long-grain wild rice (170g)
  • Kosher salt
  • 2 navel oranges
  • 2 tablespoons good olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons raspberry vinegar
  • 1/2 cup seedless green grapes, cut in half
  • 1/2 cup pecans, toasted
  • 1/4 cup dried cranberries
  • 2 tablespoons scallions, white and green parts, chopped 
  • 1/2 teaspoon freshly ground black pepper

Instructions:

  1. Add the uncooked wild rice into a medium-sized pot along with 4 cups of water and 2 teaspoons of salt. Bring it to a boil and then let it simmer without a lid for 50 to 60 minutes until the rice becomes very soft. Once ready, strain the excess water and return the rice to the pot. Cover it and let it steam for about 10 minutes. While the rice is still warm, transfer it to a mixing bowl. Utilize a sharp knife to peel the oranges, ensuring to remove all the white pith. Separate the orange sections from the membranes and combine them with the rice in the bowl. Mix in the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and some pepper. Let it sit for approximately 30 minutes to allow the flavors to meld together. Taste the mixture to check the seasonings and serve it at room temperature.
