Whole-wheat orzo & tuna salad with broccoli

Enjoy a delightful mix of whole-wheat orzo and tuna combined with crisp broccoli in this tasty salad. Perfect for a refreshing and flavorful meal!

Ingredients:

  • 2 cups whole-wheat orzo
  • Zest & juice of 1 large lemon
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon ground pepper
  • ¼ teaspoon kosher salt
  • 4 cups finely chopped broccoli (400g)
  • 2 (140g) cans tuna in olive oil, drained and flaked
  • 1 cup sliced pitted Kalamata olives
  • 1 tablespoon chopped fresh oregano

Instructions:

  1. Heat a large saucepan filled with water over high heat until it starts boiling. Put orzo in and cook, occasionally stirring, until it is cooked but still firm when bitten, for about 5 to 7 minutes. Drain the orzo and then rinse it under cold water until it cools down.
  2. While the orzo is cooking, in a big bowl, mix together lemon zest, lemon juice, oil, pepper, and salt using a whisk.
  3. Combine the cooked orzo with broccoli, tuna, olives, and oregano in the prepared dressing; mix well.
