Whole-wheat orzo & tuna salad with broccoli

Ingredients:
- 2 cups whole-wheat orzo
- Zest & juice of 1 large lemon
- ¼ cup extra-virgin olive oil
- ½ teaspoon ground pepper
- ¼ teaspoon kosher salt
- 4 cups finely chopped broccoli (400g)
- 2 (140g) cans tuna in olive oil, drained and flaked
- 1 cup sliced pitted Kalamata olives
- 1 tablespoon chopped fresh oregano
Instructions:
- Heat a large saucepan filled with water over high heat until it starts boiling. Put orzo in and cook, occasionally stirring, until it is cooked but still firm when bitten, for about 5 to 7 minutes. Drain the orzo and then rinse it under cold water until it cools down.
- While the orzo is cooking, in a big bowl, mix together lemon zest, lemon juice, oil, pepper, and salt using a whisk.
- Combine the cooked orzo with broccoli, tuna, olives, and oregano in the prepared dressing; mix well.
