Whole grilled red onions with sage, honey & walnuts from sarit packer & itamar srulovich
Delight in the flavors of charred red onions paired with aromatic sage, sweet honey, and crunchy walnuts. A tantalizing salad bursting with bold tastes.
Ingredients:
- 4 large red onions, skin on
- Olive oil, for brushing
- Flaky sea salt, to finish
- 80 grams (2¾ ounces) walnuts (about ⅔ cup)
- 10 sage leaves, rolled up and cut into really thin strips
- 1 tablespoon honey
- 2 tablespoons white wine vinegar
- 2 tablespoons boiling water
- 1 teaspoon mild chile flakes
- 1/2 teaspoon salt
- A little freshly ground black pepper
- 3 tablespoons olive oil
- A few sprigs of mint, leaves picked (about 15 grams/½ ounce)
Instructions:
- Cut the red onions in half through the core without removing the skin. Coat the sliced sides with oil and place them on a hot grill with the cut side facing down. Grill for approximately 12 minutes until the cut side is dark and charred. Then, turn them over with the skin side down and continue cooking for an additional 5 minutes. The onions should be slightly softened with a bit of crunch when pierced with a knife. Transfer them to a plate to cool until they are manageable.
- While the onions are cooling, prepare the dressing. Toast the walnuts over the grill for roughly 8 minutes in a sieve or dry skillet, stirring occasionally. Crush them lightly and combine with the rest of the dressing ingredients, excluding the mint leaves.
- Separate the cooled onion halves into individual petals, removing the outer skins. Arrange the petals with the charred edges facing up on a large serving dish. Just before serving, finely chop the mint leaves and add them to the dressing. Drizzle the dressing over the onion petals and sprinkle a pinch of sea salt on top as a final touch.
- If you don't have a grill: Utilize a lightly oiled, preheated griddle pan on the stovetop following the same cooking instructions, but be aware that it may create smoke in your kitchen.
