Whole foods detox salad

Enjoy a refreshing and nutritious whole foods detox salad packed with fresh vegetables, vibrant colors, and an array of flavors that will leave your taste buds satisfied.

Ingredients:

  • 2 heads broccoli
  • 2 1/2 cups of roughly cut cauliflower florets
  • 3 large carrots, roughly chopped
  • 3/4 cup chopped parsley
  • 1/2 cup sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1/2 cup raisins
  • 1 cup dired currants
  • 1/4 cup freshly squeezed lemon juice
  • 1/8-1/4 teaspoons sea salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Place the broccoli florets in a food processor and pulse until finely chopped. Transfer to a large bowl.
  2. Repeat the process with the cauliflower florets, working in batches if necessary due to the processor's size.
  3. Add the carrots to the food processor and pulse until finely chopped. Combine them with the broccoli and cauliflower in the bowl and mix well.
  4. Mix in the parsley, sunflower seeds, pumpkin seeds, raisins, and currants. Season with lemon juice, salt, and pepper.
  5. For storage, refrigerate the salad in a tightly sealed container. I prefer using a large glass container to maintain the salad's freshness.
