Whole foods detox salad
Enjoy a refreshing and nutritious whole foods detox salad packed with fresh vegetables, vibrant colors, and an array of flavors that will leave your taste buds satisfied.
Ingredients:
- 2 heads broccoli
- 2 1/2 cups of roughly cut cauliflower florets
- 3 large carrots, roughly chopped
- 3/4 cup chopped parsley
- 1/2 cup sunflower seeds
- 1/4 cup raw pumpkin seeds
- 1/2 cup raisins
- 1 cup dired currants
- 1/4 cup freshly squeezed lemon juice
- 1/8-1/4 teaspoons sea salt
- 1/2 teaspoon black pepper
Instructions:
- Place the broccoli florets in a food processor and pulse until finely chopped. Transfer to a large bowl.
- Repeat the process with the cauliflower florets, working in batches if necessary due to the processor's size.
- Add the carrots to the food processor and pulse until finely chopped. Combine them with the broccoli and cauliflower in the bowl and mix well.
- Mix in the parsley, sunflower seeds, pumpkin seeds, raisins, and currants. Season with lemon juice, salt, and pepper.
- For storage, refrigerate the salad in a tightly sealed container. I prefer using a large glass container to maintain the salad's freshness.
