White bean feta kale salad

Ingredients:
- 1/2 bunch kale
- 2 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1/2 tablespoon rice vinegar
- 1/2 teaspoon cumin
- 1 pinch sea salt
- 1 pinch freshly ground black pepper
- 430g small white beans, cooked
- 1/4 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup red onion, diced
Instructions:
- Rinse the kale leaves, remove the stems, and cut them into small pieces. Place them in a big bowl.
- Pour olive oil and lemon juice over the kale. With your hands, gently squeeze and rub the kale leaves for 2 to 3 minutes, or until they become as tender as typical lettuce.
