White bean feta kale salad

Ingredients:

  • 1/2 bunch kale
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 tablespoon rice vinegar
  • 1/2 teaspoon cumin
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • 430g small white beans, cooked
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup red onion, diced

Instructions:

  1. Rinse the kale leaves, remove the stems, and cut them into small pieces. Place them in a big bowl.
  2. Pour olive oil and lemon juice over the kale. With your hands, gently squeeze and rub the kale leaves for 2 to 3 minutes, or until they become as tender as typical lettuce.
