Wheatberry & farro salad

Ingredients:

  • 1/2 cup hard winter wheatberries
  • 1/2 cup farro
  • 1 cup finely diced red onion
  • Good olive oil
  • 1/4 cup balsamic vinegar
  • Kosher salt and freshly ground black pepper
  • 3 scallions, minced, white and green parts
  • 1/2 red bell pepper, small-diced
  • 1 carrot, small-diced
  • 1/4 cup chopped flat-leaf parsley

Instructions:

  1. In two large saucepans, bring 3 cups of salted water to a boil separately. One saucepan will have the wheatberries while the other will have the farro. Let them cook over low heat without a lid for about 45 minutes until they become tender. Combine both in a large bowl after draining them.
  2. While the grains are cooking, cook the red onion in 2 tablespoons of olive oil on medium-low heat until it turns translucent, which usually takes about 5 minutes. Turn off the heat, then mix in 1/4 cup of olive oil, balsamic vinegar, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Combine the onions with the wheatberries, farro, scallions, red bell pepper, carrot, and parsley. Mix everything thoroughly.
  3. Let the salad rest for at least 30 minutes so that the wheatberries and farro can soak up the dressing. Adjust the seasoning according to your taste preference before serving the salad at room temperature.
