  • 7 cups cold water
  • 1 teaspoon salt

Instructions:

  1. Inspect wheat berries thoroughly, removing any debris. Wash thoroughly under cold running water. Transfer to a large sturdy saucepan. Pour in water and salt.
  2. Bring to a boil over high heat, then lower the heat, cover the pan, and simmer gently for 1 hour, stirring from time to time. Drain and wash. For immediate serving, use it right away. If preparing in advance, follow the instructions for making ahead.
