Wheat berry salad

  • 7 cups cold water
  • 1 teaspoon salt

Instructions:

  1. Inspect the wheat berries thoroughly, removing any stones. Wash them well under cold running water. Transfer to a large sturdy saucepan. Pour in water and add salt.
  2. Bring to a boil over high heat, then lower the heat, cover, and let it simmer gently for 1 hour, stirring occasionally. Drain and wash again. If you plan to serve them hot, use them right away. Otherwise, refer to the instructions for making ahead.
