Wheat berry, rye & kale salad
Indulge in the delightful combination of hearty wheat berries, wholesome rye, and nutritious kale in this vibrant and satisfying salad.
Ingredients:
- 1/2 cup wheat berries
- 1/2 cup rye berries
- 1 large bunch lacinato kale
- 1 shallot
- 1/3 cup shaved parmesan
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/4 teaspoon sea salt
- 1 pinch black pepper
- 1 pinch aleppo pepper
- zest of one lemon
Instructions:
- place wheat and rye berries in a bowl and cover them with a good amount of water. Let them soak for a minimum of two hours. Drain the water and transfer the grains to a small saucepan with about 3-4 cups of fresh water. Cook covered over low heat until the grains are tender but still intact, approximately 30-60 minutes depending on the soaking time. Stir occasionally to prevent sticking. Once cooked, drain any excess water and transfer the grains to a bowl to cool down.
- To prepare the shallots, peel and thinly slice them, then soak the slices in a bowl of cold water for at least 5 minutes to reduce their raw bitterness.
- Clean and pat dry the kale, removing tough stems. Slice the kale into thin strips and place them in a large salad bowl. Gently massage the kale with your hands for around a minute until it softens and darkens slightly in color.
- Combine lemon juice, olive oil, and honey in a small bowl to make the dressing. Pour the dressing over the kale, add the cooked grains and other ingredients. Drain the soaked shallots and mix them into the salad. Toss everything together and season to taste with salt, parmesan, or additional olive oil.
