Wheat berry, chickpea & feta salad

Ingredients:
- 3 cups wheat berries
- ⅓ cup extra-virgin olive oil
- ⅓ cup red-wine vinegar
- 2 tablespoons minced shallot
- 2 teaspoons pure maple syrup
- ¾ teaspoon salt
- ½ teaspoon ground pepper
- 1 15-ounce can no-salt-added chickpeas, rinsed
- ½ cup sliced celery
- ½ cup crumbled feta cheese
- ⅓ cup golden raisins
- ⅓ cup sliced scallions
- ⅓ cup toasted chopped walnuts
Instructions:
- Fill a sizable pot with water and place wheat berries inside. Heat over high flame until it starts boiling. Lower the heat to keep a mild simmer; cover and cook until soft, for about 50 to 60 minutes. Strain the water. Place the wheat berries on a baking sheet with raised edges to cool down, which should take roughly 30 minutes.
- Beat together oil, vinegar, shallot, maple syrup, salt, and pepper in a large bowl. Mix in 3 cups of cooled wheat berries (set aside the remaining 4 cups for later use), along with chickpeas, celery, feta, raisins, scallions, and walnuts. Stir well to blend.
