Wheat berry, chickpea & feta salad

Delight in the perfect blend of hearty wheat berries, creamy feta cheese, and savory chickpeas in this flavorful salad. Enjoy a burst of Mediterranean flavors in every bite.

Ingredients:

  • 3 cups wheat berries
  • ⅓ cup extra-virgin olive oil
  • ⅓ cup red-wine vinegar
  • 2 tablespoons minced shallot
  • 2 teaspoons pure maple syrup
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 15-ounce can no-salt-added chickpeas, rinsed
  • ½ cup sliced celery
  • ½ cup crumbled feta cheese
  • ⅓ cup golden raisins
  • ⅓ cup sliced scallions
  • ⅓ cup toasted chopped walnuts

Instructions:

  1. Fill a sizable pot with water and place wheat berries inside. Heat over high flame until it starts boiling. Lower the heat to keep a mild simmer; cover and cook until soft, for about 50 to 60 minutes. Strain the water. Place the wheat berries on a baking sheet with raised edges to cool down, which should take roughly 30 minutes.
  2. Beat together oil, vinegar, shallot, maple syrup, salt, and pepper in a large bowl. Mix in 3 cups of cooled wheat berries (set aside the remaining 4 cups for later use), along with chickpeas, celery, feta, raisins, scallions, and walnuts. Stir well to blend.
