Wheat berry, apple and parsley salad

Delicious wheat berry salad with crisp apples and fresh parsley, a perfect blend of flavors and textures for a delightful culinary experience.

Ingredients:

  • 1 cup wheat berries (soaked overnight)
  • 1-2 apples
  • 1 bunch parsley
  • 3 celery stalks
  • 2/3 cup almonds
  • 1 tablespoon tahini
  • 1 lemon, juice
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 2 tablespoons water
  • Pinch salt
  • Pinch pepper
  • Pinch red pepper flakes

Instructions:

  1. Boil wheat berries in salted water for approximately 25-30 minutes.
  2. As the wheat berries are cooking, toast almonds. Slice the toasted almonds, apple, celery into small chunks, finely chop parsley and combine in a spacious bowl.
  3. To prepare the dressing, blend tahini, lemon juice, olive oil, water and spices.
  4. Once the wheat berries are cooked, strain them and combine with the salad along with the dressing. Toss all ingredients together.
