Wheat berry and fava bean salad

Ingredients:
- 2 cups dried fava beans, rinsed
- 8 cups water
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- ¾ teaspoon salt
- 4 cups thinly sliced romaine lettuce
- 1 cup diced cucumber
- ½ cup thinly sliced red onion
- 1 medium tomato, diced
- 4 teaspoons extra-virgin olive oil
- ¼ cup crumbled feta cheese
Instructions:
- Place beans in a sizable bowl and ensure they are submerged in 2 inches of water. Let them soak overnight. (Alternatively, place the beans in a large pot and cover them with 2 inches of cold water. Bring it to a boil. Let it boil for 2 minutes. Turn off the heat, cover it, and allow it to sit for 1 hour.)
- Get rid of the water from the beans and place them in a large pot. Pour in 8 cups of water and bring it to a boil. Lower the heat to medium-low, cover it, and let it cook until the beans are tender, which should take around 1 to 1 1/2 hours. If needed, add more water to ensure the beans are covered with 1 inch of water.
- Keep 1 cup of the liquid used for cooking the beans aside; then, drain the beans. Put the beans in a medium-sized bowl and mash them using a potato masher. Add the reserved liquid gradually until you reach a consistency similar to a thick pureed soup. Mix in lemon juice, cumin, and salt.
- Spread the mashed beans on a serving platter. Sprinkle lettuce, cucumber, onion, and tomato on top. Drizzle some oil and sprinkle feta over it.
