Wedge salad with blue cheese dressing
Indulge in the rich flavors of a classic wedge salad with creamy blue cheese dressing, crisp iceberg lettuce, savory bacon bits, and tangy cherry tomatoes. Perfect for a delicious and satisfying meal.
Ingredients:
- ounces blue cheese, crumbled (about 1¼ cups)
- cup mayonnaise
- cup sour cream
- cup buttermilk
- tablespoon (or more) fresh lemon juice
- tablespoon poppy seeds
- teaspoons garlic powder
- teaspoons hot sauce
- teaspoons onion powder
- teaspoon freshly ground black pepper
- teaspoon celery seeds
- Kosher salt
- cup dried minced garlic
- cup dried minced onion
- cup poppy seeds
- cup sesame seeds
- ounces thick-cut bacon, cut into ½-inch pieces
- pint cherry tomatoes, halved
- tablespoon fresh lemon juice
- tablespoon olive oil
- Kosher salt, freshly ground pepper
- heads of iceberg lettuce, cored, halved
- Torn dill sprigs (for serving)
Instructions:
- Combine blue cheese, mayonnaise, sour cream, buttermilk, fresh lemon juice, poppy seeds, garlic powder, hot sauce, onion powder, pepper, and celery seeds in a medium mixing bowl. Adjust seasoning with salt and additional lemon juice if necessary.
- Preparation tip: You can prepare the dressing a day in advance. Simply cover and refrigerate it until ready to use.
- Brown minced garlic, minced onion, poppy seeds, and sesame seeds in a medium skillet over medium heat, stirring continuously, until they turn a golden color, for about 3 to 5 minutes (be attentive to avoid over-toasting, as it can make the garlic taste bitter). Transfer the mixture immediately to a baking sheet with edges to cool down.
- Fry the bacon in the same skillet over medium-high heat, turning it occasionally, until it becomes crispy and browned, typically around 6 to 8 minutes. Then, let it drain on paper towels.
- In a small bowl, mix the tomatoes with lemon juice and olive oil, and season with salt and pepper. Allow it to marinate for 5 minutes.
- Add a sprinkle of salt and pepper to the cut sides of the lettuce. Insert the marinated tomatoes in between the leaves and any openings. Drizzle the salad with the prepared dressing, ensuring it reaches between the leaves. Sprinkle the toasted seed mixture on top. Finish by adding the crispy bacon, dill sprigs, and an extra dash of pepper.
