Wedge salad
Delicious wedge salad with crisp iceberg lettuce, creamy blue cheese dressing, crispy bacon, ripe tomatoes, and tangy red onions. Perfect for a refreshing and flavorful meal.
Ingredients:
- 110g slab bacon into 1"-thick pieces
- 1/2 finely chopped small shallot
- 3/4 cup sour cream
- 1/2 cup buttermilk
- 1 tablespoon chopped fresh chives
- 1 tablespoon white wine vinegar
- 1/2 cup crumbled mild blue cheese
- kosher salt, freshly ground black pepper
- 1 small head of iceberg lettuce
- 1/4 thinly sliced small red onion
Instructions:
- Slice 4 ounces of slab bacon into 1"-thick pieces and cook in a medium skillet over medium-low heat, stirring occasionally, until it becomes crispy, which should take around 5-7 minutes. Then, move the bacon to a plate lined with paper towels to drain the excess oil. In a separate small bowl, mix together 1/2 finely chopped small shallot, 3/4 cup sour cream, 1/2 cup buttermilk, 1 tablespoon of freshly chopped chives, and 1 tablespoon of white wine vinegar; gently stir in 1/2 cup of crumbled mild blue cheese. Adjust the thickness of the dressing by adding more sour cream or buttermilk if needed. Season the dressing well with kosher salt, freshly ground black pepper, and additional vinegar if desired. Divide 1 small head of iceberg lettuce into 4 wedges; arrange them on plates and drizzle the prepared dressing over the top. Finish by garnishing with the bacon, 1/4 thinly sliced small red onion, and extra crumbled blue cheese and chopped chives.
