Way better than it sounds carrot and tuna salad

Ingredients:

  • 5 oz can of oil-packed tuna
  • 2 large carrots
  • 1 large clove of garlic
  • 2 1/2 tablespoons rice wine vinegar (don't substitute)
  • 1 1/2 tablespoons olive oil
  • 30g Parmesan cheese
  • 1 large bunch romaine lettuce
  • Salt and Pepper

Instructions:

  1. Cut head of romaine lettuce lengthwise into 1-inch strips resembling those used in Caesar Salad. Thoroughly clean and remove excess water by spinning.Unpack tuna and put it in a big bowl. Crush it with a fork and mix in olive oil and rice vinegar.,Shred carrots using a large-sized grater and finely chop garlic. Combine with the tuna mixture and mix well.,Using the same large-sized grater, grate Parmesan cheese and mix it into the carrot-tuna mixture. Season with salt and pepper according to your preference (we suggest adding plenty of black pepper).,If serving as a main dish, distribute the lettuce evenly between 2 large bowls, or use 4-6 smaller bowls for side servings.,Evenly distribute the carrot-tuna combination among the bowls and serve.
