Watermelon salad with mint and crispy prosciutto

Ingredients:
- Olive oil, for grill grates and brushing
- 24 1-in. cubes cantaloupe (from 1 firm-ripe cantaloupe)
- 12 fresh mint leaves, plus torn mint for serving
- 6 thin slices prosciutto (about 4 oz.), cut in half lengthwise
- 24 1-in. cubes Halloumi cheese (from 1 lb. Halloumi)
- 24 1-in. cubes ciabatta bread (from 6 oz. ciabatta)
- 2 tablespoons balsamic glaze
Instructions:
- Heat up the grill to a medium-high temperature of 400°F to 450°F and lightly grease the grates. Take 12 pieces of cantaloupe, wrap each one with a mint leaf followed by a piece of prosciutto. Slide onto 24 presoaked skewers (8 inches long), alternating a wrapped cantaloupe cube, an unwrapped cantaloupe cube, a cube of Halloumi cheese, and a bread cube on each skewer (adjust the quantity for longer skewers). Lightly coat the skewers with oil.
- Place the skewers on the grill grates. Grill with the lid open, turning once, until you see grill marks on both sides, approximately 1 minute per side. Transfer the skewers to a serving platter. Drizzle balsamic glaze over them and sprinkle torn mint on top.
