Watermelon radish and spinach salad

Ingredients:

  • 1 cup Barley, dry
  • ¼ cups Olive oil
  • juice from 1 small lemon
  • zest from ½ small lemon
  • 2 Large handfuls spinach leaves
  • 1 Medium watermelon radish, trimmed and sliced thin on a mandolin
  • 5-6 Basil leaves, chopped
  • 110g 110g feta, crumbled

Instructions:

  1. Prepare barley following the directions on the package. Allow it to come to room temperature.
  2. In a compact bowl or container, blend or mix olive oil, freshly squeezed lemon juice, and lemon peel.
  3. Mix spinach and barley in a spacious bowl. Drizzle the dressing over the top and mix. Incorporate watermelon radishes, basil leaves, and feta cheese. Mix thoroughly and serve.
