Watermelon radish and spinach salad

Ingredients:
- 1 cup Barley, dry
- ¼ cups Olive oil
- juice from 1 small lemon
- zest from ½ small lemon
- 2 Large handfuls spinach leaves
- 1 Medium watermelon radish, trimmed and sliced thin on a mandolin
- 5-6 Basil leaves, chopped
- 110g 110g feta, crumbled
Instructions:
- Prepare barley following the directions on the package. Allow it to come to room temperature.
- In a compact bowl or container, blend or mix olive oil, freshly squeezed lemon juice, and lemon peel.
- Mix spinach and barley in a spacious bowl. Drizzle the dressing over the top and mix. Incorporate watermelon radishes, basil leaves, and feta cheese. Mix thoroughly and serve.
