Watermelon feta salad

Ingredients:

  • 2 cups cubed watermelon
  • 110g feta cheese (preferably French feta)
  • 1 cup balsamic vinegar

Instructions:

  1. Pour the balsamic vinegar into a saute pan and heat it over medium heat.
  2. Heat the mixture until it starts boiling on medium heat.
  3. Once boiling, reduce the heat to allow the vinegar to simmer gently.
  4. Take off the stove and allow it to cool. It will thicken into a syrup, similar to the consistency of chocolate syrup.
  5. Place the watermelon in a bowl.
  6. Break the feta cheese into small pieces and combine it with the watermelon.
  7. Drizzle the watermelon and feta salad with the reduced balsamic vinegar before serving.
