Watermelon, endive, and fig salad

Ingredients:

  • cup fresh lemon juice
  • Tbsp. extra-virgin olive oil
  • Tbsp. honey
  • Kosher salt, freshly ground pepper
  • baby seedless watermelon (about 2½ lb.), sliced into 3" triangles (rind left on)
  • red endive, leaves separated
  • oz. fresh Mission figs, halved lengthwise
  • cup Castelvetrano olives
  • Flaky sea salt

Instructions:

  1. Mix together lemon juice, oil, and honey in a small bowl; add kosher salt and pepper to taste.
  2. Place watermelon, endive, figs, and olives on a serving plate in separate sections. Pour the dressing on top and sprinkle with sea salt.
