Watermelon, endive, and fig salad

Ingredients:
- cup fresh lemon juice
- Tbsp. extra-virgin olive oil
- Tbsp. honey
- Kosher salt, freshly ground pepper
- baby seedless watermelon (about 2½ lb.), sliced into 3" triangles (rind left on)
- red endive, leaves separated
- oz. fresh Mission figs, halved lengthwise
- cup Castelvetrano olives
- Flaky sea salt
Instructions:
- Mix together lemon juice, oil, and honey in a small bowl; add kosher salt and pepper to taste.
- Place watermelon, endive, figs, and olives on a serving plate in separate sections. Pour the dressing on top and sprinkle with sea salt.
