Watermelon caprese salad

Ingredients:
- 110g fresh mozzarella, cut into 1/2-inch pieces
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- 4 cups cubed seedless watermelon
- ¼ cup thinly sliced fresh basil
- 1 tablespoon best-quality balsamic vinegar or balsamic glaze (see Tip)
- 1 tablespoon extra-virgin olive oil (Optional)
Instructions:
