Watermelon and tomato salad with spicy feta sauce

Indulge in the refreshing flavors of watermelon and juicy tomatoes paired with a zesty spicy feta sauce. A perfect blend of sweet and savory!

Ingredients:

  • 1 large jalapeño
  • 170g feta cheese
  • 1/4 cup hot water
  • 5 tablespoons extra-virgin olive oil
  • Salt and freshly ground pepper
  • Twelve 1/2-inch-thick wedges of seedless watermelon, rind removed
  • 1 pint grape tomatoes, halved
  • 1 tablespoon finely chopped basil

Instructions:

  1. Grill the jalapeño directly over an open flame or in the oven until it becomes charred on all sides. Place it in a bowl, cover it with plastic wrap, and let it sit for 10 minutes. Remove the skin, stem, and seeds from the jalapeño, then put it in a blender. Mix in the feta, hot water, and 1/4 cup of the olive oil until the mixture is very smooth. Transfer it to a bowl, and add salt and pepper to taste.
  2. Place the watermelon and tomatoes on a large serving dish, sprinkle basil on top, and drizzle with the remaining 1 tablespoon of olive oil. Season with salt and pepper, and serve with the feta dressing.
