Watermelon and arugula salad with walnuts
Delight in a refreshing watermelon and peppery arugula salad topped with crunchy walnuts, a perfect balance of sweet, bitter, and nutty flavors.
Ingredients:
- 1360g watermelon, cut into 1-inch cubes
- 1 small red onion, thinly sliced
- 1 1/2 cups arugula
- 1/3 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 2 tablespoons raspberry vinegar
- Salt and freshly ground pepper
- 1/2 cup shredded ricotta salata
- 1 cup coarsely chopped walnuts
- 2 tablespoons extra-virgin olive oil
Instructions:
- Combine the watermelon with the red onion in a spacious bowl. Keep it in the fridge until it's cold, approximately for half an hour.
- Mix the arugula with the watermelon. Blend the orange and lime juices with vinegar in a tiny bowl. Spread this dressing over the salad and add salt and pepper for seasoning. Sprinkle with ricotta salata and walnuts; then add a bit of olive oil on top before serving.
