Watercress & endive salad
Freshen up your plate with a vibrant watercress and endive salad! The peppery watercress and slightly bitter endive make a perfect pairing for a refreshing starter or side dish.
Ingredients:
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 2 teaspoons honey
- 1 teaspoon chopped fresh thyme
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- ¼ teaspoon kosher salt
- 4 cups mixed baby lettuces
- 1 medium ripe Bosc pear, thinly sliced
- ¼ cup crumbled Gorgonzola cheese
- ¼ cup toasted walnuts, coarsely chopped
- ¼ cup golden raisins
Instructions:
- Combine oil, lemon juice, honey, thyme, mustard, pepper, and salt in a big bowl and mix well. Add lettuce and lightly mix. Garnish with pear slices, Gorgonzola, walnuts, and raisins. Serve right away.
