Watercress and avocado salad

Try this refreshing watercress and avocado salad for a burst of flavor. The peppery watercress pairs perfectly with the creamy avocado, creating a harmonious blend of taste and texture. Perfect for a light and healthy meal.

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 large bunches watercress, stems removed, leaves washed and well dried
  • 2 ripe avocados, halved, seeded, and peeled

Instructions:

  1. Combine olive oil, lemon juice, salt, and pepper in a bowl and mix well. Rip watercress into small pieces and mix with the dressing. Distribute the salad evenly onto 6 plates. Cut avocado halves into thin strips lengthwise. Place the avocado strips in the middle of each salad as decoration, then serve.
