Warm winter farro salad

Delight in the cozy flavors of this hearty warm winter farro salad. Packed with nutritious ingredients and a burst of seasonal tastes.

Ingredients:

  • 1/3 cup plus 2 tablespoons extra-virgin olive oil
  • 1 small yellow onion, quartered
  • 1 small carrot, halved
  • 1 celery rib, halved
  • 340g farro (1 3/4 cups)
  • 5 cups water
  • Kosher salt
  • 3 tablespoons red wine vinegar
  • Freshly ground pepper
  • 1/2 small red onion, thinly sliced
  • 1 small seedless cucumber, halved lengthwise and thinly sliced crosswise
  • 1 pint grape tomatoes, halved
  • 1/4 cup chopped fresh basil

Instructions:

  1. Heat 2 tablespoons of oil in a large saucepan. Cook the yellow onion, carrot, and celery covered over low heat until slightly softened, which should take around 5 minutes. Add the farro and mix well with the oil. Pour in the water and bring it to a boil. Keep covered and simmer until the farro is slightly soft, approximately 10 minutes; add salt to taste. Continue to simmer until the farro is cooked but still slightly firm, about 10 more minutes. Strain the farro and remove the onion, carrot, and celery. Allow it to cool completely.In a large bowl, mix the remaining 1/3 cup of olive oil with vinegar, salt, and pepper. Gently stir in the cooked farro, red onion, cucumber, tomatoes, and basil. Season with additional salt and pepper if needed before serving.
