Warm winter bean salad with chicken
Delight in a savory combination of hearty beans, tender chicken, and a medley of seasonal veggies in this comforting warm winter bean salad.
Ingredients:
- 2 skin-on chicken breasts
- 2 tbsp olive oil
- 2 garlic cloves, sliced
- 100ml chicken stock
- 300g butter beans, rinsed and drained
- 1 lemon, juiced
- 100g kale, tough stalks removed and leaves torn
- small handful of dill, finely chopped
- 1 head of radicchio, roughly chopped
- 15g parmesan, finely grated
Instructions:
- Dredge the chicken in 1 tbsp of the olive oil and season generously. Warm a frying pan over a medium flame and sauté the chicken, with the skin facing down, until the skin turns golden, approximately 8-10 mins. Turn the chicken over and continue cooking for another 8-10 mins until it is fully cooked. Place it on a plate to rest for 5 mins before slicing it.
- Pour the garlic, broth, and butter beans into the pan and let it simmer gently for a few minutes until the broth is almost completely reduced. Take it off the heat and season according to your taste.
- While waiting, mix the lemon juice with the kale in a bowl. Use your hands to massage the juice into the leaves until they become tender, which takes around 2-3 mins. Add the dill, radicchio, parmesan, and remaining olive oil. Season well and transfer onto a serving dish. Garnish with the garlicky beans and chicken.
