Warm spinach salad with poached egg

Indulge in a flavorful warm spinach salad featuring a perfectly poached egg. A delightful blend of fresh greens and rich, runny yolk.

Ingredients:

  • 1 egg - poached
  • 2 cups chopped spinach
  • 1/2 cup shredded carrots
  • 2 tablespoons chopped yellow onion
  • 1/4 cup canned chickpeas
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon water
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Sea Salt or to taste
  • 1/8 teaspoon Black Pepper or to taste
  • Pinch Cayenne Pepper or to taste

Instructions:

  1. Heat up some oil and cook the onions until they become translucent, which should take about 1-2 minutes.
  2. Throw in the carrots, spinach, chickpeas, and 1 tablespoon of water. Cover the pan and let it cook for 2-3 minutes before turning off the stove.
  3. Season with salt, black pepper, and a drizzle of lemon juice.
  4. Plate the softly boiled egg on top of the warm salad and crispy pieces of bread. Finish it off by adding a pinch of salt and a sprinkle of Cayenne pepper over the egg.
