Warm shredded carrot salad with carrot greens

  • 1 piece small red onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 tablespoon fresh ginger, peeled and finely chopped
  • 100g or 100 grams shredded cabbage
  • 1/2 teaspoon salt, adjust to taste
  • 1 pinch ground black pepper
  • 1/4 teaspoon ground Turmeric
  • 1 tablespoon sunflower oil

Instructions:

  1. 1. Begin by heating the oil in a large pan, then proceed to cook the finely chopped red onion until it becomes soft. Proceed by adding the garlic and ginger, cooking for 3 minutes. Following this, introduce the shredded cabbage to the pan mixture, ensuring it is well combined. Cover the pan and allow the cabbage to cook until it softens completely. Once the cabbage is cooked, add the carrot and carrot leaves, stirring to evenly distribute all the ingredients. Sprinkle in the spices and continue to cook until the carrots have also softened, approximately 5 more minutes. This versatile dish can be served as a side or main, paired with steamed white rice. It is a delightful vegan meal or snack option.
