Warm shiitake-barley salad

Ingredients:
- 1 cup barley
- 1/4 cup extra-virgin olive oil
- 340g shiitake mushrooms, stemmed and thinly sliced
- 5 shallots, thinly sliced (2 cups)
- 2 tablespoons fresh lemon juice
- Salt
- Pepper
- Sliced scallions, for garnish
Instructions:
- Boil the barley in a big saucepan until it becomes soft, which should take around half an hour. Then, get rid of the water by draining it.
- While that's happening, put olive oil in a large frying pan and heat it up. Throw in the mushrooms and shallots and sauté them over medium heat until they turn golden and tender, which could be from 5 to 7 minutes. Add lemon juice and the cooked barley, then season with salt and pepper. Move everything to a serving dish and top it off with some chopped scallions.
