Warm shiitake-barley salad

Indulge in the rich flavors of shiitake mushrooms and nutty barley with this warm and hearty salad bursting with umami goodness. Perfect for a cozy meal anytime.

Ingredients:

  • 1 cup barley
  • 1/4 cup extra-virgin olive oil
  • 340g shiitake mushrooms, stemmed and thinly sliced
  • 5 shallots, thinly sliced (2 cups)
  • 2 tablespoons fresh lemon juice
  • Salt
  • Pepper
  • Sliced scallions, for garnish

Instructions:

  1. Boil the barley in a big saucepan until it becomes soft, which should take around half an hour. Then, get rid of the water by draining it.
  2. While that's happening, put olive oil in a large frying pan and heat it up. Throw in the mushrooms and shallots and sauté them over medium heat until they turn golden and tender, which could be from 5 to 7 minutes. Add lemon juice and the cooked barley, then season with salt and pepper. Move everything to a serving dish and top it off with some chopped scallions.
