Warm red quinoa & squash salad

Ingredients:
- 1/4 cup red quinoa
- 1/2 cup water
- 1/4 teaspoon Kosher salt
- 1 1/2 cups chopped, peeled butternut squash (3/4" chunks)
- 1 teaspoon extra virgin olive oil
- 8 grape tomatoes, halved lengthwise
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh basil (loosely packed)
- Freshly ground pepper
Instructions:
- In a small saucepan, mix together the quinoa, water, and salt. Heat over high heat until it simmers. Lower the heat, add squash, cover, and cook for 10 to 15 minutes until the quinoa is cooked and the squash is tender. (If the squash is dry, consider adding a bit more water.)
- Take the saucepan off the heat and gently mix in the olive oil, tomatoes, feta, and basil. Season with freshly ground pepper to your liking.
