Warm quinoa, collard greens, and squash salad

Indulge in the delightful flavors of warm quinoa, vibrant collard greens, and tender squash in this delicious salad. Perfect for a nutritious meal!

Ingredients:

  • 1 acorn squash
  • 1 cup dry quinoa
  • 1/2 medium red onion
  • 5 garlic cloves
  • 1 green bell pepper
  • 3 cups chopped collard greens
  • 2 1/2 cups vegetable broth
  • 1 tablespoon sea salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon coconut oil
  • 1 teaspoon olive oil
  • 1 tablespoon freshly chopped parsley

Instructions:

  1. Cut the squash into two halves, scoop out the seeds and pulp.
  2. Drizzle some olive oil over it, sprinkle half of the salt and pepper on top.
  3. Bake on a baking sheet lined with parchment paper at 230 °Cor approximately 40 minutes until tender.
  4. In the meantime, wash and drain the quinoa, simmer it in 2 cups of vegetable broth for around 15 minutes.
  5. Dice the garlic, onion, and bell pepper, cook them with the remaining salt and pepper in coconut oil until they are tender.
  6. Simmer the greens in half a cup of vegetable broth until they just start to wilt, which should take about 12 minutes.
  7. Peel and dice the roasted squash.
  8. Mix all the components together, add some freshly chopped parsley. Serve the dish while it's still warm.
