Warm quinoa, collard greens, and squash salad

Ingredients:
- 1 acorn squash
- 1 cup dry quinoa
- 1/2 medium red onion
- 5 garlic cloves
- 1 green bell pepper
- 3 cups chopped collard greens
- 2 1/2 cups vegetable broth
- 1 tablespoon sea salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon coconut oil
- 1 teaspoon olive oil
- 1 tablespoon freshly chopped parsley
Instructions:
- Cut the squash into two halves, scoop out the seeds and pulp.
- Drizzle some olive oil over it, sprinkle half of the salt and pepper on top.
- Bake on a baking sheet lined with parchment paper at 230 °Cor approximately 40 minutes until tender.
- In the meantime, wash and drain the quinoa, simmer it in 2 cups of vegetable broth for around 15 minutes.
- Dice the garlic, onion, and bell pepper, cook them with the remaining salt and pepper in coconut oil until they are tender.
- Simmer the greens in half a cup of vegetable broth until they just start to wilt, which should take about 12 minutes.
- Peel and dice the roasted squash.
- Mix all the components together, add some freshly chopped parsley. Serve the dish while it's still warm.
