Warm potato salad

Ingredients:

  • 450g new potatoes, scrubbed and cut into 1/4" slices
  • 4 tablespoons white wine vinegar
  • 2 tablespoons Dijon mustard
  • salt & pepper
  • 1/2 cup olive oil
  • 2 scallions, thinly sliced
  • 3 tablespoons chopped fresh parsley

Instructions:

  1. Boil the potatoes in a big pot of water until they become soft. Combine vinegar and mustard in a large bowl. Add salt and pepper to taste. Slowly whisk in the olive oil until the mixture thickens. Mix in the cooked and drained potatoes gently. Allow the potatoes to marinate in the dressing for at least 10 minutes. Stir in the scallions and parsley. Adjust the seasoning with more salt and pepper as needed.
