Warm potato salad

Delight in the savory flavors of warm potato salad. Enjoy the rich taste of tender potatoes mixed with tangy vinaigrette and fresh herbs.

Ingredients:

  • 1360g small salad potatoes
  • 1 onion, finely chopped
  • 1 teaspoon dijon mustard, or similar
  • 7 tablespoons white wine vinegar
  • 300 milliliters beef or vegetable stock
  • 4 tablespoons vegetable oil
  • 1/4 bunch chives, finely chopped
  • salt and pepper, to taste

Instructions:

  1. Cook the potatoes until tender, then peel them while they are still warm. Warm up the stock.
  2. In a large bowl, combine the mustard, vinegar, salt, pepper, and sugar. Mix in the chopped onions and slice the slightly cooled potatoes thinly into the bowl.
  3. Pour half of the warm stock over the potatoes, gently toss them, then cover the bowl and let it sit for approximately 20 minutes.
  4. Ideally, the potatoes would have absorbed most of the stock - check the consistency before adding the remaining stock to ensure the salad is moist but not soupy!
  5. Cover and let it rest for another 15 minutes. Just before serving, drizzle with oil and gently toss the salad to avoid breaking the potato slices. Garnish with chives and serve.
